A simple fresh tomato pasta. You burst cherry tomatoes into a quick sauce, wilt in spinach, then finish the penne in the pan with a little pasta water and cheese.

- onion (diced)
- cherry tomato
- spinach
- cheese (any kind)
- olive oil
- salt
- pepper
- herbs (your choice)
Method

Boil the penne.

Cook the garlic and onion in olive oil, then add the cherry tomatoes and cook until they're soft enough to crush.

Crush the tomatoes and mix. Season with salt, pepper, and herbs, then add the spinach and let it reduce.
