Pan-Seared Steak with Potatoes and Veg

Seared steak basted in garlic-thyme butter, with potatoes done fast in the air fryer or parboiled and roasted for crispier edges, plus a simple green veg.

Ingredients
- 2 steaks (~10 oz each) steak (of choice)
- 2 tsp steak spice (e.g. Montreal steak spice)
- 2-3 tbsp butter
- 2-3 cloves garlic (crushed)
- 3 sprigs thyme (a few sprigs fresh)
- 1 tbsp oil (high smoke point, for searing)
- 500 g potato (Yukon gold or russet)
- 1 medium onion (sliced, for the roast method)
- 1 tbsp salt (for boiling, roast method)
- 1 head broccoli (or another green veg)

Pull the steak out 30 to 45 minutes ahead. Pat it very dry and season generously with steak spice.

Heat a heavy pan (cast iron) with a little oil until very hot. Sear undisturbed about 2 to 3 minutes per side to build a crust.

Add the butter, crushed garlic, and thyme. Tilt the pan and spoon the foaming butter over the steak for the last 1 to 2 minutes, until it hits your target temp. Rest 5 to 10 minutes before slicing.

Potatoes the quick way: chop into chunks, toss with oil and steak spice, and air fry at about 400F for 18 to 22 minutes, shaking halfway, until golden and crisp.

Potatoes for crispier edges: peel and chop, rinse off surface starch, cover with cold salted water, and boil until just slightly soft at the edges, 8 to 12 minutes. Drain and steam-dry, then roast on an oiled sheet with sliced onion, crushed garlic, and oil at about 425F for 20 to 35 minutes, flipping once. A pinch of baking soda in the boiling water gives craggier edges.

Green veg: roast broccoli tossed with oil, salt, and garlic at 425F for 18 to 22 minutes, or air fry at 400F for 10 to 12 minutes. Green beans, asparagus, brussels sprouts, or garlicky spinach all work too, or just roast your sweet peppers on the potato tray.

Doneness, pulling about 5F early: rare 120 to 125F, medium-rare 130 to 135F, medium 140 to 145F, medium-well 150 to 155F, well 160F and up.
