A classic folded omelette cooked low and slow so it stays soft. Keep it plain or load it with bacon, peppers, onion, and spinach.

- 3 eggs
- green onion (sliced)
- cheese
- butter (for the pan)
- bell pepper (optional, sauteed)
- onion (optional, sauteed)
- bacon (optional, air-fried)
- spinach (optional)
- salt
- pepper
Method

Optional: air-fry the bacon and/or saute the peppers and onions first. You can also add spinach in before you fold.

Beat the eggs and season with salt and pepper.

Add butter to the pan, and once it's melted pour in the eggs. Cook on medium.

As it cooks, pull in the outside edges and spread the egg around the center like scrambled eggs, until it starts to solidify.

Add salt, pepper, and green onion, plus cheese if you want, then fold it in thirds.
