No-Cream Greek Yogurt Tiramisu

No-cream, all-Greek-yogurt tiramisu. Higher protein, lighter than the classic.
Your 10x10 pan is a touch bigger than the 9-inch the recipe was sized for, so your two layers will be slightly thinner. Totally fine, just spread the yogurt to cover. If you have a few extra ladyfingers, you can add them to fill any gaps. Taste the yogurt mix before layering, the cappuccino yogurt is already sweet, so you may want less than 1/3 cup sugar. Dip the ladyfingers fast so they don't go soggy. Overnight chilling sets it best.

Ingredients
- 125 milliliters strong brewed coffee, cooled
- 0.3 cups cocoa powder
- 0.3 cups sugar (for the coffee soak)
- 360 grams cappuccino Greek yogurt (5%)
- 240 grams plain Greek yogurt (0%)
- 0.3 cups sugar (for the yogurt, to taste)
- 18 ct ladyfingers
- 1 tablespoons cocoa powder (for dusting, just before serving)

Make the coffee soak: Whisk together the cooled brewed coffee, sifted cocoa powder, and sugar until smooth. Set aside.

Mix the yogurt cream: In a bowl, stir the cappuccino Greek yogurt and plain Greek yogurt together with sugar until smooth and creamy. Taste and adjust sweetness.

Layer: Quickly dip the ladyfingers into the coffee mixture, one second per side. Lay half in the bottom of your pan. Spread over half the yogurt cream, then repeat with the remaining ladyfingers and yogurt.

Chill: Refrigerate at least 2 hours (overnight is even better). Dust with cocoa powder just before serving.
