Grilled Cheese and Tomato Soup

An easy fifteen minute comfort meal: a buttery, well toasted grilled cheese with a bowl of tomato soup. Add caramelized onions or some sliced meat to the sandwich if you want.

Ingredients
- 4 slices sourdough bread (or any good bread)
- 2 tbsp butter (for the bread and the pan)
- 4 slices cheese (marble, mozzarella, havarti, or a mix)
- 1 can canned tomato soup (plus 1 can of water)
- 1/2 tsp Italian seasoning (to taste)
- 1/4 tsp garlic powder (to taste)
- 1/4 tsp salt (to taste)
- 1/4 tsp pepper (to taste)
- 1/2 cup caramelized onions (optional)
- 4 slices deli meat (optional, sliced)

Butter the bread on both sides. If you like, melt a little butter in the pan too.

Assemble the sandwiches and set them in the pan over medium heat.

Empty the soup into a small or medium pot, refill the can once with water and add that too, then warm it over medium heat.

Season the soup with Italian seasoning, garlic powder, salt, and pepper. Stir and heat until it simmers.

Cook the grilled cheese until the cheese starts to melt and the underside is golden, watching that the bread doesn't burn. Flip it and press down with the spatula to toast the other side.

Once the cheese is melted and both sides are toasted, take it out, cut it in half, and serve with a bowl of soup.
